When using AVIA to set black and white level on my 801s, I noticed that when reverting back to PAL, the settings are not correct for it, yet NTSC discs look great.

So, should I be using AVIA for NTSC discs and Video Essentials for PAL discs?

PAL and NTSC have different voltage levels for black. You will find that many DVD players allow you to change this for NTSC so it matches PAL. It'll be called black level or something like that. Set it to darker or 0ire for NTSC and then you'll find AVIA and VE will be correct.
