I have a Denon 2012 Blu-Ray player. It gives me the options of outputting CD sound either via HDMI,Coax,or Analogue into my Onkyo 809 home cinema receiver.Would there be much to choose between these three methods?
    Thank you

HDMI will be digital out , so the amps DAC will be used , and depending on the player and amp setup , you may be required to have a screen on somewhere , which is not always desirable if you just want to listen to music.

Coax will be digital out , again the amps DAC comes into play , and technically should be no different to the HDMI output except for the screen requirements and so on.

Analog out will use the players DAC and not the one in the amp , so it will be different based on the quality of the DAC onboard vs the quality of the DAC in the amp.

Try each and see what you prefer.
