This is my current set up after just purchasing the TV.Can I replace the old and without optical cable option dvd player (amp?) with just an AV reciever and get surround sound with tv programmes? Would I still use optical or would the hdmi connection work.

I assume you want to continue to use your current speakers. If so then this is probably not possible since all in one speakers tend to be low impedance (anything below 4 ohms should not be used with an AVR) and also the subs tend to be passive (an AVR will need an active sub). Hence you will probably need to buy AVR and speakers.
