Couple of questions...

Firstly is 11mm underlay to thick for the hall and stairs?

Should I avoid felt back carpet for hallways?

Not sure who and where to ask as if I ask a store they will tell me what they want to make the most ££

We had the polyurethane underlay on our stairs and all throughout the upstairs. I think it was 10 or 12mm. It's fine on stairs.
 
We've got 11mm underlay on our stairs. Don't buy it from the carpet shops though, the prices are massively inflated. Buy full (15m sq) rolls yourself from one of the online stores, you can get a good quality 10-11mm underlay (Tredaire etc) for around £3 per sq m, shops usually charge at least double that if not more.
