Amplifier and Speaker Matching

Much is made of this, but given that the components are of suitable quality and the output of the former, and sensitivity and impedance of the latter are compatible, are there really any obvious mismatches, or is it more likely to be personal preference based essentially on preferred choice of music and listening level?

Putting a bright amp with bright speakers can compound fatigue when listening in the higher region and some speakers just can't be matched with certain amps. However like you've inferred this can certainly be a personal choice.

As for hard to drive speakers, those maybe with under 89dB sensitivity then putting those with low powered amps with a poor power circuit is something of a disaster and perhaps more investigation by the purchaser is required here. As a rule though power ratings on speakers can be disregarded as people hearing will implode long before the speaker explodes. Turn the volume up at your peril.
