8mm film converting to digital

I am a newbie in video editing and have a box of about 70 of my dads's 1970's 8mm small reels. I purchased the kodak reelz covnverter to convert it over but the quality was poor and sent it back. Then I purchased the Chinon 2500gl 8mm projector and this plays the picture on a wall very good. My thought was to take my go pro and record the wall while it was playing, then take it into my cyberlink powerdirector video editor software and clean it up. The problem I am having is the go pro is picking up the flashing bulb from the projector and makes all the white colors kind of flashy. When taking that into the editing software and changing settings for exposure color and saturation fixes one things but makes it look worse in other areas. I attached a sample of one of the videos. Is this just the issue I am going to run into by trying to record off the wall with go pro, or is there a way to fix this issue another way.
