That's really personal preference. I personally prefer the WT guitar. The fret buttons are the same (supposedly they're more responsive on the WT guitar, but it isn't something I have noticed). The stum bar and whammy bar are longer on the WT Guitar, which feel better to me. The whammy bar is undoubtedly better on the WT guitar, but the stum bar is again preference. The WT one is quieter but feels different, so it's up to you. Other adavntages of the WT guitar are the button positioning (the star power/back button is designed to be pressed with your wrist, and is much better while playing. Of course most people activate star power with the tilt sensor anyway) and the addition of the touch sensitive panel on the neck (which TBH is pretty useless). It is also a bit longer and closer to actual guitar size than the GH3 one.
As for the build quality, I wouldn't say GH3 has better build quality than WT. There seem to have been more complaints about problems in the WT guitars than the GH3 ones, but I don't think thats a build quality problem. What I will say is they both ahve significally better build than the GH2 (360) one...which TBH is a joke. Heck, the Original Guitar Hero controller for the PS2 is better.
This is how I would rank it:
WT > GH3 > RB1 > GH2 360
The Rock Band 2 Guitar would go somewhere on either side of the WT one judging by internet reviews, but it's not available in the UK
If you havn't played GH3 before and want to play it as well, I'd go for a GH3 bundle with guitar. Bear in mind that for local multiplayer you can use 2 guitars, 1 drum kit and a gamepad + mic all at once, so you could get both WT and GH3 if you plan to do that at some point.
