Just done a quick search and cant find a proper answer. (or my searching skills arnt up to date these days.

I just wanted to know if I downloaded a bunch of VC games, would I still be able to play them without being connected to the net so I can take the Wii away with me and still play them?

They certainly will.The games are downloaded onto the wii's memory.
