Yes, but that depends very much on what software you use...
My experience at the non-enterprise level of the market is mainly using Asterisk as the PBX. I don't tend to use softphones around the house as I prefer a normal hardware phone and not having to have my PC running all the time....
With Asterisk you can 'easily' program buttons on your phone that will initiate the recording....
But as you have to ask, Asterisk maybe a bit too much.....
If you don't mind having to be near your PC, or you maybe using your pc for VOIP anyway....There are loads of applications out there that can record whatever your soundcard is playing...Mainly made to circumvent DRM and netcasts, but easily applied to record a VOIP phonecall....
