There probably isn't much seperating the Sony and Philips sets in terms of performance, but I would ask the dealer if he could connect a dvd player (through RGB) as this will provide a better demonstration of what each set is capable of rather than the poor quality RF feed they are currently being fed.
100hz is a bit of an aquired taste, some people swear by it while others hate it. Again, the only way to get a better idea of whether or not it appeals to you is to try and see it with a dvd player connected (although this isn't as simple as it sounds, you would be surprised at how many dealers can't even set up a dvd player properly, resulting in pictures not much better than a bad RF input).
At the price point you are looking at, it's likely that the 100hz tv won't have top notch picture processing, so it's probable that the 50hz sets you're looking at will be the better bet.
One last point, when buying a tv, make you're decision based purely on the picture performance, and don't even consider the sound. It's very easy (and cheap) to upgrade the sound at a later date with a modest seperates system which will clearly better the sound built into the tv, giving you the best of both worlds.
