u know at the end where they give the 2 chefs a bundle of food and ask them to make something on the spot come up with a dish and they both do ON THE SPOT

is this actully done on the spot or have they been giving time before the show to think of something?

Well, as they get to discuss what they can make with the ingredients that the contestants bring along (which is edited out, so it look like they've made it up on the spot), I would hazard a guess that the same thing happens in the 15 minute spot too.
