You are correct in that the voice comes from the center, the rear speakers are for the surround effects and along with the front left and right provide that all enveloping atmosphere.

The rear speakers create the sounds that, relating to the picture, come from behind you, like a door opening behind where the camera is.
The centre channel mainly does voice but also does a few other ambient effects too, not many though.

What you get from each speaker when playing a dvd depends on how the studio mixed it. If it's hissy then either you're playing very loud or the amp is low quality or both or something else. Which dvd are you testing this with?
What amp are you using and what setting e.g. auto surround?

that DVD is a good sountrack.......shouldnt be hissy......if it is then you got something wired up wrong or something is not working correct....
dialogue generally comes from the centre speaker, but there is nothing to stop it panning across the front speakers or even coming from the back speakers if the studio mixed it due to the location of the actors in the scene......
music can come from any of the speakers
effects sounds can likewise come from any of the speakers....
this is why the centre speaker is the most important because it potentially has to deal with all three of those, voice, music and effects.......however if you have a high quality system then usually the other channels are very good too and could qualify themselves as centres by being able to handle anything.........
the rears speakers usually have ambient atmospheric sounds, but will also have effects when a lot of action is going on, or a specific action makes it obvious the sound would go from front to behind you etc......and as i say, on occasion you could even hear a voice from it...plus music......the surrounds in Day After Tomorrow should be getting a fair old workout....i know mine did...lol
try unwinding the speaker cable, i doubt its being a problem, but you never know, worth a try for an easy fix...lol

oh and its always possible you have your speakers wired up the wrong way on the amp end...lol......double check that.....
i take it you are using a coax or optical cable from DVD player to amp yes?
