This is not correct, or not at least not consistent with the way the functionality works on a Sky+ box (which I tested last weekend in response to a similar query) - I suppose the HD box may be different.
The Instant Rewind setting controls how far into the show you can REWIND, if you are currently watching live - basically as the name implies. It does NOT control how much of the show you can pause.
If you pause a show the box will (or at least should) continue recording until the END of the current show as set by the EPG. This is regardless of the setting in Instant Rewind. This should be obvious from the fact it is possible to set instant rewind to 5 minutes, or even OFF but still pause TV for longer.
What happens when you reach the END of the current show is a different matter. This is the point at which you can get the recording interrupted message.
Unfortunately I am unable to offer a consistent explaination of exactly when recording interrupted does appear. One might assume you only get it when running more than X minutes behind live, where X is the Instant Rewind setting. However when I tested this didn't appear to be the case.
In my tests I had IR set to 5 minutes and paused a film by 45 minutes and was able to watch to the end and then well into the subsequent program without issue.
