I've googled and googled, and it seems that there are very few posts, articles, and / or any other information pertaining to speaker placement in odd-shaped rooms, or rooms where perfect couch / sofa placement is not possible.
My room setup / seating arrangement is as follows:

The "2U" corner reference is obviously the TV. Notice the sub in the top left corner. The center channel is still sitting in a box, and so are the two rear speakers. My receiver is capable of 5.1, but I'm currently using a "stereo" sound configuration.
Please excuse my ignorance, and if I have this wrong, feel free to blast me.
1. I'm planning to mount the center channel speaker on a yet-to-be installed corner glass shelving unit just above the TV in the corner.
2. I'm planning on mounting the rear-right speaker on the right wall, beside the bookcase, about a foot or two behind the L-shaped sectional sofa, on it's own shelf. The speaker is a bookshelf unit, not satellite.
3. I'm planning on mounting the rear-left speaker on the left-wall, near where the L-shaped couch begins... basically just above the current location of the sub.
Given the circumstances and limitations concerning the type of couch, placement of the TV, etc, am I right with my approach, or should I be mounting the speakers in other locations.
*NOTE* --- Front-left and front-right are floor-tower speakers, and are currently located on the left and right of the TV respectively. Again, if this needs to be corrected, please let me know. Keep in mind the double-doors that are directly to the right of the TV that lead to a den (in other words, there is very limited space).
*NOTE* --- Due to limitations, I have to mount the rigtht-rear high-up, so it will be shelved at least 6 ft above ground. Sorry, but if I lower it, I'm blocking half the path between the wall and the couch.
