how to change picture settings?

Hi the ps3 I just delivered has not got a picture on the guys telly. I just rememberd I have been using it with an hdmi lead with maximum picture settings.

Now the composite lead does not provide a pic, how do we get the settings back to normal, so the composite cable can be used?

From my bad memory don't you just hold the power off button for about 10 seconds then turn it on again.
