So one question: Can I make it so I can have the latest firmware and run my games from the memory stick ? Does it copy them off the UMD ?

CFW is at version 5.00, just a few behind Sony's OFW 5.03, there is only minor differences mostly security fixes etc

Yes you can run game backups of your memory stick or the originals in the optical drive.

It won't create the backups for you, you have to create them yourself; there is a guide on my sig if you need it
