Yeah I have had similar problems streaming video and FLAC sound to the PSP via PS3 Media Server. I think the problem is down to the slow wireless speeds with the PSP. My PS3 and media server are all wired so there should be no bandwidth issues which suggests theres too much data being thrown at the PSP for it to handle.
Saying that I did get it to work without the stuttering however at a lower (you tube like) quality.
So try connecting to remote play via the internet rather than via the PS3 directly and it will automatically downsample the video.
Also try feeding the sound to your PS3 and the video to your PSP. If the stuttering stops then you know for sure its bandwidth issues to your PSP.
Overall though I am pleased to get it working to an acceptible standard and I am going to try and find a free wifi spot at some point to see if I can watch my movies etc from outside my flat.
