I have bought a DLP projector in the past after an extensive shop demo only to find that the RBE was much much worse in my cineme than it was in the shop. The opposite of this could also be true and it depends on a whole host of factors, screen gain, ambient light control, DLP colour wheel speed and so on.
If you use this test in a shop demo with a DLP projector, I wouldn't be surprised if the majority of the viewing population observed rainbows with this very harsh test which isn't truly representative of most viewing material.
As the top option will generally cost you a restocking fee or other charges, the next best option of course is to demo at a shop, take along a range of material, good rainbow inducing material are films like Sin City, light sabre fight scenes and so on. I'm sure a quick search on this forum will reveal many.
Finally though the best option of course if you're worried about the issue and/or are buying blind, buy an LCD or LCOS projector instead but bear in mind that they have their own issues too.
