First of all I've moved this thread from the Shows and Events forum (?!) to the DLP & LCD projectors forum. I suspect that the answer you want relates to a DLP or LCD projector, but you didn't specify a budget or any specific requirements with regard to space or convenience, so the answer is without question a CRT projector. A Barco 800 series running at 720p, for example.

To start you off....

Hi Def on the xbox is going to be 720p (720 verticle lines) so start looking at projectors with 720 verticle lines (e.g. 1280x720) as their "native" resolution.

Non hidef projectors will scale the xbox pic down to match its native resolution which loses detail in the scale down process (it has to get rid of pixels somehow). Some might be terrible at this and others are quite good at it (e.g. the Sharp projector is getting good reviews in the forum, its cheap (£600) and produces a great pic from what ive seen in screenshots but it isn't hidef so it scales down the pic)

Some *latest* HiDef projectors to look into are:

Panasonic AE900 ( Approx £1100 )
Hitachi TX200 ( Approx £1200 )
Sanyo Z4 (Approx £1100 )

These are all 1280x720 native home cinema (widescreen) LCD projectors that will look great using a 360 but each projector has slightly different features and followers.

So, start and search this forum as there is a wealth of info availble on these models.
