In my experience the 801s will lock staight onto the HD furry 3 (and the 3 is the inportant bit)
The earlier versions caused issues with image shift which is why you may have needed an interface box like the extron.

the 109xi is the current version and would be over kill for what you are trying to do

Extron Computer-Video Interfaces - RGB 109xi

If you can get hold of the earlier versions that will work just as well on your projector
.
Extron Computer-Video Interfaces - RGB 109

My advice would be to get the Fury3 version with the x5 bnc output and try it first.

You are about right The port 3 is on the back be really carefull because there are RS232 ports on the front and a control port on the back and they all look similar. The contol port feeds a 30volt pin at several amps.

The furry should come with a very short x5 bnc female lead which you then use what ever length of bnc cable to connect into the x5 bnc's on the back of the projector.
There is a special pin out for the port 3 it's not a standard EGA connector. but essentially what you say is correct.
I don't think you will nedd specail software for the PC you will need to run it a sensible resolution and I would go for 1080x768 to start with and then you could fine tune from there

possition wise the projector as about right distance.
Good screen too if I recall
The edge of the grid (genlock pattern) should just reach the edge of the screen.
The interface should sort the rolling picture, its what they do
Describe the cable you need I or other might have a spare they want to move on.

By the sound of it you did not get te extron cable that connects to the 134xi.
I don't know the pin outs but I bet they won't be standard and a quick lok at the spect sheet looks like that cable had a circuit board in it too Extron Computer-Video Interfaces - RGB 134xi

If you still have the 109 use that it will save grief.
I have a few x5 BNC's here gathering dust
