I suspect I need to find another view or screen.
My standard screen has Library down to play lists on the left. Thumbnails of all my albums in the centre and genius recommendation on the right.

You need to click on your ipod (or other MP3) on the left hand side (about half way down). Then you bring up a summary screen and a number of tabs across the top. Click on music and you can then select certain artists, playlists, genres etc to sync.
Not found an easy way to do certain tracks as opposed to whole albums though. Only way I can find of doing that is to select the tracks in your library, right click and get info then alter the Genre to custom and call it whatever you want. then follow instructions above and select that genre to sync.
