Not enough older films in peoples lists. I've cheated a little as I've added a couple of trilogies in as one film:

The Godfather (parts one to three, although you could skip the third part)
The Shawshank Redemption
The Lord of the Rings (parts one to three)
The Good, The Bad, The Ugly
Schindler's List
Seven Samurai (and you could add in the "remake" Magnificent Seven)
Pulp Fiction
Star Wars (both triologies and the animated clone wars, but you could skip episodes I to III)
One Flew Over the Cuckoo's Nest
North by Northwest
It's a Wonderful Life (there is no better Christmas movie)
Se7en
Chinatown
Alien (+ Aliens)
A Clockwork Orange
The Great Escape

godfather trilogy
matrix trilogy
star wars series

as a short list. too many other to choose from, it depends on taste etc, if you want great action flicks like bad boys 2, or OTT blockbusters that are good for showing off the setup like the day after tomorrow, or cool/cult classics like betty blue or dog day afternoon, you have great movies VS great discs. the main list is great movies that have pretty good dvds (if you get the right versions)

There are about four, but Life of Brian and Holy Grail are supposed to be their best - which I agree with

theres an old boxset with meaning of life, life of brian, holy grail, and something different, that from time to time you can pickup in sales or amazon for peanuts. i think one of the movies is a 2 discer, so 5 discs in total. i think i got it for about £12 a couple of years ago. the shrink wrap is still on mine mind i'll maybe watch it one day

The Godfather Trilogy are probably the greatest mater pieces in the History of Cinema and are my favourite films

I agree though that i did find Part 3 rather weak compared to parts 1 and 2

For me personally, the Saw films are also essential to my collection
