I had both, one after the other, and they can't really be compared.
The N95 8GB is more technically capable, has better connectivity, can be used as a modem, faster web browsing, a far superior camera, video recording, native MMS, better Bluetooth implementation, has a real keypad (big bonus IMO) and is generally a more capable phone from a technical point of view. Music playback and quality is very good, as is video playback.
The iPhone is a far, far superior media device. Video and music is far superior in use, although not much better on sound quality (that's a compliment to the Nokia, not a criticism of the iPhone). The iPod software on it is amazing, very easy to use and manage and very slick and pretty. The rest of the phones UI is superb, web browsing is sloooow but much better to navigate pages with. Via WiFi it's perfect.
So, if you want the most technically capable phone, want to use it for data transfer or want a great camera and video recorder, get the N95 8GB.
If you want an iPod Touch that can do the phone thing, and media playback is the most important thing, get the iPhone.
