My set up is as follows;

TV - LG 37LH3000
DVD/Gaming - PS3
Sound system - Bose Lifestyle 5 Music Centre

Is the only way to get the sound from TV/PS3 to go through sound system via optical connection?

I think the Bose only has the analogue component cable capability (red/white connections).

Is there any way around this or will I not be able to use Bose for the TV/PS3?

Buy an optical->phone stereo adapter that will allow you to use the TV with the speakers.

You should be able to use the analogue video output cable from the PS3 which has the red/white phono connectors to connect it to the sound system while still using HDMI for video or just use another optical adapter.
