It's silly little things really.... On the 2G you couldn't use a few apps without wifi, and with the 3G model out you could - for example, my 2G can only access youtube when it has a wifi network to work on, whereas the 3G model can access youtube over the 3G cell net.... I don't know if the App Store or iTunes apps can get access using the 3G cell net, but the 2G can't - only over wifi...
3G gives much faster internet browsing and download speeds, and also, a commonly overlooked one, is it gives much better call quality. I remember going from a 2G nokia to a 3G one and being amazed at how much better it sounded. Soon as I used my 2G iPhone I instantly remembered that 2G Nokia! Calls sound muffled and quiet in comparrison to a 3G call quality.... Same with my Nokia N73 - I could tell just from the quality of the call when I was in or out of a 3G reception area.....
3G cell net bandwidth also allows video calling, something AGAIN overlooked by Apple (and the lack of front facing camera) which surprised me seeing as they build iSight camera's into all their computers and notebooks!
As for MMS, I never understood why it was overlooked completely. I guess they wanted everyone to use email instead, but thats no good to me when I want to send a picture of something funny I see to someone elses phone that can't get access to email - for example, my friends girlfriend is on PAYG and won't touch to data connection cos it costs a fortune!
MMS works over GPRS (2G) and isn't limited to 3G, but obviously the upload and subsquent download of the data in the message is faster when you have 3G...
