whats the easiest way? Can you do it in Itunes ?

i use handbrake lad very easy and good quailty

Another Handbrake vote here.

I use the Apple Universal setting rather than iPhone setting as it's a higher res allowing the picture quality to stay high if zooming in to full screen.
