Clearing personal data off iphone?

I have sold my iphone as an unlocked phone, how do I format my phone of all my own stuff but still leave it unlocked? I can't seem to find out how to do this anywhere.

'Restore' it in iTunes, with a cooked firmware. It will wipe it and reset everything back to factory defaults.

Or use the option settings to erase all data.
