So I have a new Hero on Three mobile, I've seen a lot of references to rooting, but what's the point? I understand it will allow me to install customs ROMs, but what benefit is that going to give me over what was installed out of the box?

Rooting is to Android what Jailbreaking is to the iPhone.

In a unix environment 'root' is the highest level of access that has no restrictions. In essence, it allows a deeper level of access than the standard operating system will allow. If you're read about rooting, you've probably already read some of the things you can do with a rooted device, so I wont list any again.

But it gives you 'root' level access, hence the term 'rooting'.
