Kitchen Project - which cables behind LCD TV?

Evening all, another 2 hours of research done here tonight!!!

I'm currently in the middle of revamping our kitchen, and last week on the verge of wallpapering the back wall and adding a shelf, I suddenly had a "Eureka" moment and decided we should have an LCD TV fitted on the wall, along with our Denon stereo system. :D

So, I have a Sony KDL32V4000 arriving on Tuesday, and have so far ordered up a bracket, and some basic cables but I have a few problems/questions before carrying on the work.

The wall is currently chased out for cables, and the audio wiring for the stereo is all fine and sorted.

The TV will have the following uses:

- Basic freeview watching whilst cooking etc
- Linked through the stereo
- Option of adding our lounge Topfield when we upgrade it
- HDMI DVD player
- Option to use my PS3 or 360 when mrs is watching Soaps
- Connect to a laptop for music at parties
- Used as 2nd living room when my son gets older (nearly 2 now )

Cables:
So far I have ordered:

2 x HDMI (DVD and PS3)
1 x Scart (Topfield and/or DVD)
1 x RCA/Phono cable (Stereo)
1 x Coax (Main TV aerial)

All cable will be 3m long and run through a brushplate down near the floor, and up to behind the TV.

Would it be wise to add a VGA cable and component cable as well? (For laptop and Xbox), if so what type of cable do I need?

Power to TV: the power cable can come straight in through the wall behind the TV and my options are a single socket, or a fused connection unit. I like the FCU idea, but that will mean cutting the Sony power lead as it isn't a kettle type plug, and I worry that it will invalidate the JL warranty if I do that?

Anything else I may not have thought about?
