Smile Setting up system in new build home - advice w. pics!

First post on the forum and some advice needed

I've currently got a 42" Hitachi Plasma, Yamaha Amp, Wharfdale speakers and sky in a good old fashioned house. I'm moving home to a new-build and need to use Cat5!

Pic of existing set up....

New home living room pic where I need the install:

Hometech system in cupoboard under stairs - wire hanging out are RF aerial lead and BT connection.

2 sky inpurts and 2 RF feeds in cupboard under stairs next to Hometech.

As far as I can see there is no SKY feed to the livingroom, just Cat5 cabling by the radiators and windows along with a couple of what I think are Cat5 blanking covers.

Now, I am getting SKY + installed and would also like SKY in my bedroom - same Cat5 issue.

As SKY comes with decent AV outputs, the suggestion of the developers to run the signal over RF is not ideal.

So, if anyone can advise on:

1. Solution to place SKY+ in cupboard, connect with CAT5 to transmit high quality audio and at least component video signals to the livingroom and bedroom.

2. Best position of Plasma in Livingroom - not an ideal shape from the pics!

3. Best kit to do above!

My thoughts on the TV position are in front of the double window or by the radiator!

Thanks in advance

One more thing, I'm considering putting a drop down projector screen in front of the window (plasma below for daytime).
