Welcome to the forum.
It sounds like the connections you plan on running to each room are adequate, as long as there isn't major upgrading in the future.
The 5.1 faceplate (I assume for speaker connections) can make the cables a little tidier, but you may want to think about a 7.1 faceplate in case you choose to upgrade in the future to take advantage of the new sound formats on blu-ray.
I don't know much (anything) about sky connection, but the freeview aerial can be split almost as much as you like. Beware though that this can introduce a poor signal if cheap splitters are used. You may be better off using a powered distributer, often located in the loft.
