HELP - house renovation - av project

I’m in the process of renovating and extending a 1920s house and hoping to be moving in by October. The house will end up being 4 bedrooms up stairs, with a large open plan family living room/kitchen diner, drawing room and kids play room downstairs. My current av set up, like me is a bit old now and I’ve also got two young sons so my av requirements are very different to what I currently have, mainly because my 8 month old keeps pushing my floor standers over!
The renovations costs are running well over budget so my av project budget needs to be kept to a minimum, so at this stage I’m not thinking of engaging with an expensive specialist company and I’m hoping that with help and advice from this great forum and a good electrician I can achieve a decent result.

My dream is a to have a very minimal installation with all the boxes in the under stairs cupboard and no visible cables, the main av vewing area will have a pioneer 50” plasma wall hung in the family room, this will display sky hd, new blue ray player (£400 budget), existing Pioneer DVD player (if quality is better than new BR) and a PC, with wireless keyboard and mouse. sound will be handled by new AV receiver £500 budget running a set of kef eggs. At this stage there isn't plans to put a TV in the drawing room or the kitchen but I may do in the future so if possible can the Sky HD signal be sent to these rooms via wall sockets if needed in future? Kids room down stairs I’ll need a budget projector(£800), that will display from a second sky box, and share the blue ray with the living room, plus all the kids consoles Nintendo Wii, xbox etc. Upstairs kids rooms and guest room no TVs at the mo but wall sockets running off the shared sky box with the downstairs kids room, a feed from blue ray /dvd and if possible the PC can a PC be shared around a house? Master bedroom wall mounted 40” lcd, taking feed from a 3rd sky plus box bluray / dvd and PC with wireless kb mouse etc.

That’s my plan but I have no idea how best to achieve it, I don’t even understand silly things like with all the boxes under the stairs how will the remote controls talk to them and can 1 PC be shared around a house, its unlikely that more than 1 person will use it at once so maybe a switched setup could work?

Anyway this is a green field site if you all think I’m mad and doing this all wrong please tell me how you would do it.
