With closed headphones, the driver housing is sealed from the outside, and only "open" for sound on the inside, your "ear-side". Hence they help isolate you from sounds coming from outside; plus they don't leak so much sound out to other people.
Open headphones are open in all directions, but you will still hear external sounds like the telephone, and they will leak sound out to other people.
Generally, open headphones sound less constricted, but people may prefer closed headphones for use at work or late at night so as not to disturb others.
