This is the problem we have. I think the reason the earlier GT's were more fun imo was because they were not as accurate sims compared to the later versions. Due to the PS1/PS2 not having the computing power of the PS3, the physics modelling was probably not as realistic and thus allowed a bit of 'arcady' behaviour into the gameplay.
However, GT has always been about the sim aspect so the cars are not as throwable around the circuit, oversteer a lot less etc in standard or slightly modified form. I could be wrong with more advanced/extreme setups but how many people really go into that much depth to make their car more 'fun' to drive?
People will say that GT is all about sim and if you want fun, but NFS or something similar but I'm a big fan of the GT series as I still have all 5 GTs and regularly play them on my PS3. I even waited to buy the PS2 until GT3 came out and similarly with GT5P and PS3. It's just a shame that the 'fun' bit is slightly getting left behind.
I've still been waiting impatiently for GT5 and will buy it as soon as it's out - just wish it hadn't taken so many years...
