I've done a lot of travelling in the area and I would recommend staying in Bayeux rather than Caen, which is a bit modern and soulless. Bayeux is right in the heart of the landing area and was the only major town untouched during the fighting, largely thanks to the German commander, who withdrew rather than see it damaged, so it has an old-world charm. There's also a very good D-Day museum and, of course, the tapestry.
Alternatively you could try a Chambre d'Hote (B & B) out in the country - they are generally good value and have a personal touch.
I've been impressed by Brittany Ferries lately - their food and service is second-to-none, but as with all ferries they can be expensive at convenient sailing times.
For sights, everyone will want to see Omaha and its cemetery, but take a look at the smaller Brit cemeteries dotted around the countryside: I challenge you to read the visitor books and not blub like a baby. A personal favourite 'attraction' is Pegasus Bridge and the Cafe Gondree: years ago I had the honour of meeting Mme Gondree-Pritchett, who was six when the cafe was the first house to be liberated, and has been instrumental in preserving the original bridge in a nearby field. As far as I know, she's still running the cafe.
