OK nearest thing on here to a Food Forum
Baked some peppers last week in the oven. (1st time  )
Halved, scrape the crap out and then stuffed with mincement, bit of parmasan etc etc.
Anyone got any tasty suggestings as to what else to stuff em with

Yes, cut the lids off, fill them with a precooked spiced minced lamb and rice mixture and bake. For the last 5 minutes baking, put feta cheese on top and serve with the lids put back on....delicious Greek style dish....and I have had the same thing a few times using large firm tomatoes as well!

That's my favourite way of having them, Dom, I love stuffed peppers. Sometimes I mix the mincemeat with finely chopped onion (both fried initially and mixed with tomato puree) then cooked in a saucepan with a beef stock cube, Worcester Sauce and a little water. Perhaps this is your way too. I then mix it with cooked rice and stuff the peppers. Sprinkle with Parmesan and put in a hot oven for about 30 minutes until peppers are soft. Sprinkle with chopped parsley. I also like the topping of chopped parsley, breadcrumbs and mature grated Cheddar, it gets nice and crisp. I used to parboil the peppers for about five minutes but it's not really necessary if there's enough moisture in the filling.
Another one I tried (saw on one of these chef programmes) was to stuff them with cream cheese mixed with sweet chilli sauce, quantity to your taste, chopped spring onions, a squeeze of lemon juice, and mixed with chopped cooked prawns, and, after cooking, sprinkled with chopped coriander. I suppose a sort of Thai stuffed pepper! These could be eaten hot or cold.
My husband did one once with minced lamb and cous cous but I wasn't so keen.
I hope we get a few more ideas from members, I've got a yearning for some right now!

I stopped my computer mid posting to see to supper and came back submitted my reply and then saw CFCI's post and Ian's. I don't think my husband had spiced and seasoned the lamb mixture with the cous cous. It came out tasting very bland, and sloppy.
I'll do it as the others say, it sounds delicious.

feta mixed with some chopped green/red chilli and a drizzle of Olive Oil, bake in oven for about 15 minutes mmmmmm
