High quality, sensible budget, movie recorder. Which do I buy?

I am embarking on a business project shortly and would like to produce a high quality, professionally editable video/movie of this particular project through its various stages with a view to having it made for commercial resale.

I do not have a budget the size of a small country and I am hoping with the array of electronic technology companies on the market and the stabilising effect of prices by the competition therein, I can purchase a kit that will enable me to produce a decent, high quality recording of the project that won't cost me the earth.

Any information provided will be gratefully received.
