I wouldnt worry about it, when you put your GPU, or CPU for that matter under full load its temperature does rise but only for a couple of minutes until the temperature difference between the heatsink and airflow is sufficient to dissipate the heat. Then things are stable, it wont just carry on getting hotter and hotter. < Provided you have good constant airflow through the case!
For the graphics card side of things I downloaded a bit of software called RivaTuner, this monitors all sorts of things like GPU temp, core speed, RAM speed etc. I havent found one bit of kit that monitors CPU and GPU temps in one app. You can also use RivaTuner to overclock your GPU, and it has included a quick test to check the overclock is stable before you apply it. I've got my 6800GT overclocked 14% to 400Mhz Core with 1100Mhz RAM and it runs fine, Idles at 59șC, full load i've never logged above 68șC.

The CPU temp is the one you want to keep an eye on, but different CPU's have different maximum operating temperatures. Shouldnt think you'll need to worry about that unless you've overclocked? What CPU are you using?

So as long as you have one of them it should work.
