Can the PS on Denon 2900 be disabled?

Okay, since my plasma will be Alis (actually delivered already but I can't install it yet until the renovations are done ) I'm considering to buy the 2900.

Opinions being what they are, I've come across different views stating whether progressive scan is useful on Alis screen or not. I guess I'll be the final judge, but in any case, can any 2900 owners out there tell me if the 2900 can select between progressive or interlace output? Would that just be too flexible, too much to ask?

Yes you can switch between progressive and iterlaced. The 2900 has dual 12bit 108 mhz dacs, one for interlaced and one for progressive scan so I am sure that the 2900 interlaced output will be of just as high quality as the progressive output.
