Storing DVD's on HDD

What is the best format to store my DVD's on extrnal HDD to retain decent quality and dolby digital?

If you can play them back OK, ISO.
This will let you keep the menu structure as well.

I just want to strem them from the xbox 360 but saving space anmd retaining DD 5.1.
