Epson software is fine.. Pretty easy to use and comprehensive ( IMHO) , Ive got 2 of thier scanners in use
I had an HP in the past which was OK but didnt like Win XP much and used a 3rd party software with it not because it was lacking but because the third party software was easier to figure out than its own
But I haven't felt the need to do that with Epson (Maybe Im a bit older now..

)
For scanning, I would scan the smaller image and specify enlarging it by 150-200% at 150 dpi
or 100% at 300-350 dpi
You can resize within Photoshop as well after scanning..
It depends too on whether you want use your deskjet or a photoprinting servive
Scanning at too high a DPI may just increase file size without adding any detail.( a bit similar to software extrapolation)
Some printers software though will output good quality by extrapolating even if presented with modest files sizes
