Digital audio "set-top box"

If my analogue audio signal is switched off and replaced by digital, is there some sort of set-top box that can be used to feed my excellent analogue hi-fi please?

Are you talking about radio or TV, either way its not the output method which changes but the transmission method. You should still be able to get DAB (or freeview) boxes that have analog audio outputs.

Radio. I have Freesat for TV.

Plenty of audio stations on Freesat IIRC, why not just hook up the Freesat box to your hifi. Run the digital output via a DAC for best quality.

If you are referring to FM Radio, I wouldn't worry about the analogue being switched off just yet - It is only the TV that is being switched off in the so-called "Digital Switchover" The government's target for "switching the analogue radio off" isn't until 2015, and there are people who don't think it'll actually happen that soon:

Furthermore, FM will still be used by local radio stations - though with any luck this will exclude "local" radio stations owned by national companies, whose only DJ for most of the time is a computer
