Using Shielded Cat5e for RBG to VGA: wall outlet options?

I am about to connect my ceiling mounted Epson EX70 projector to my home cinema system. The system outputs RGB and the projector needs VGA 15 pin. I want to put 2 wall sockets in; one to take the output and one to plug the projector into.

Following other posts i realize i can use shielded Cat5e. The cable length would only be around 20ft.

My question is: Where is it best to perform the actual conversion from RGB to VGA?
My options seem to include:

1. RGB sockets in wall at home cinema system end, VGA at the projector end (then use a VGA to VGA cable for the projector).

2. VGA at both wall sockets and use a conversion cable at the home cinema system end.

3. RGB at both wall sockets and use a conversion cable at the projector end.

Have i missed anything?

Obviously, i'm keen to use the option that introduces the least amount of interference.

I'm going around in circles trying to sort this out and would really appreciate any guidance!

You still on with this?, why the need for conversion?, what exactly is "your Home Cinema System"?
According to the manual this projector has hdmi why not just use that?
