I work at a University teaching facility and someone's found some grant money to make the lectures we run into videos for distribution. Apparently it's my job to make this happen

I'm a computer guy but I really have very little experience with AV equipment I can probably wire in the audio from our existing mic setup but I need to record the video somehow.
We're recording in a computer room rather than a conventional lecture theatre so the room is on a level plane with very little free space at the back, as such I thought maybe a fixed ceiling mounted solution would be the most appropriate. However, when I looked into hardware for this I found very little of use from my normal go-to suppliers (except for surveilance stuff which seemed to give pretty low quality video).
Is there some technical problem with a fixed video camera that I'm missing or am I just looking in the wrong places? Any advice would be greatly appreciated from hardware reccomendations to just pointers in the right direction.
