Im not sure about this. DV keeps a date stamp ( and timecode) which is a low level data stream Im not sure mpeg2 in general does: It would seem from what you explain that it might....Using it as a subtitle would mean having access to it and placing this on in a video editing software or DVD authoring software supporting subtitles. Unless there is a program written for this is, it sounds very longwinded and potentially complicated

Also the included software permits one button copy to DVD. But I dont own a DVD player other than on my PC. I keep all videos as files on my PC and watch them via a series of networked media players. Is it possible to force the copy to DVD button on the docking station to make a dvd file instead?

Maybe ..or more likely ( maybe not) For instance Sony's
Click to DVD facility on its camcorders only works with its own Vaio PCs (a fact not mentioned during the marketing)
However why not just copy the mpeg files to your HDD and use any DVD authoring software to make a DVD video folder or DVD Image File... easily done TBH
Unless the one touch software has that option.. I often find that you get that much less flexibility with "one touch" type solutions
