More advice re capture/software

I have an ADS Tech USB capture device, that when working, seems to capture video from my VHS in decent quality.

However, to me the software that comes with it feels a little unstable so I want to look at alternatives.

- Is most software out there such as Adobe compatible with all capture devices or only certain ones?

- I am not sure if it is the software or hardware but whenever the VHS tape gets to say a 2 second break in recording before it starts again the software/hardware stop capturing what is being output from the tape. Is this common with all software/hardware? Anyone any thoughts of whether it is likely the software causing this or the hardware?
