As it says in the title, are any of the launch Fresat HD boxes capable of outputing 1080p? If not I think I'll wait for future proofing reasons.

No need to wait as 1080i will be the max. 1080p requires much to much bandwidth so you will have a VERY LONG WAIT.

No reason why the scaling chip in an upcoming STB can not do 1080p, it's only an economic issue for the manufacturer when pricing the components after all.
That said if you have a 1920*1080 display then it may do a better job of de-interlacing the 1080i broadcasts or upscaling SD than any STB.
