Perfect TV setup advice needed

I would be really grateful if some people could help me as I am getting myself confused and in a right mess.

To start off with:
I would like to get a HD TV. No fussed if plasma or LCD as long as the picture is amazing. In terms of other appliances that need connecting I have:

a Pioneer DSS3 5.1 system and DVD player (that I love)
an XBOX
SKY box (although I want to get SKY HD when launched.

As far as I can see the setup would have to be:

5.1 system into TV by SCART to show DVD's
SKY box into 5.1 system via red/white leads
SKy box into TV via SCART
360 into TV via component
360 into 5.1 via optical cable

Does this seem right? If so I have a number of questions:

1. What is the best 32" TV I can buy with all that connectivity (2 SCARTS, HDMI, Component etc)

2. When I get the new SKY HD box it will connect to TV via HDMi but will it allow me to output sound via the red and white leads into my 5.1 system and if so will it still achieve 5.1 sound?

Sorry for such a long post but really confused and shop owners dont have a clue how to help me.
