Scuba_doo - as simch says YUV Video is a form of 'Component' video.
Your DVD player has a YUV Component Out and your PS2 has (as standard) RGB Out on SCART - with the option to purchase a PS2 HD pack that then gives you YUV Component out.
You can either go SCART to SCART for the PS2 and stick to RGB for that source or add the PS2 HD cable pack plus a YUV switcher and then Input both sources (DVD and PS2) as YUV.

A lot of manufacturers who offer YUV Outputs will also offer Progressive Scan Out via YUV and the fact that they give you this option tends to indicate they have spent a bit more time and cost on the YUV Outputs so whilst RGB and YUV are very similar if implemented correctly the YUV Outputs often appear to be better than the RGB Outputs.
Of course that all assumes your Display has a decent RGB and or YUV Input
