I rang Sky to see if they would do the whole installation however they said they would not put 2 dishes (5 LNB outputs) on the same house and I would have to get an outside engineer to do this.
After I get this installed is it possible to have a SKY+ and 2 multirooms rather than my dad and me having separate accounts as this would save £30 a month?

As long as you can convince Sky it should be OK.
However I think they would rather charge you more money than less
Apparently an OCTO LNB exists (8 outputs)

If they won't let you have a single account, see if you can live with one of the boxes being Free To Air only.
If you want 3 Sky+ apparently you need 2 accounts:
